- 1 handful mint
- 1 onion
- 1 garlic clove
- 4 Tbsps olive oil
- 4 ozs Peas (fresh or frozen)
- 1 Tbsp lemon juice
- salt
- peppers
- 8 slices white bread

Preparation steps

Rinse and dry mint, chop finely about 1/3 of mint. Peel onion and garlic. Finely chop onion, squeeze garlic through a garlic press. Heat oil in a pan and saute onion and garlic. Add peas and lemon juice and simmer for 3-4 minutes, stirring. Place peas into a bowl and mash coarsely with a potato masher. Add chopped mint and season with salt and pepper.

Toast bread slices in preheated oven at 220°C / 425°F for about 5 minutes or until crispy.

To serve, top each bread slice with 1-2 tablespoon of pea mixture and garnish with remaining mint. Serve.
