500 grams Ground meat
1 kaiser roll (day-old)
1 egg
1 chili pepper
100 grams Mangoes
1 tsp Curry powder
1 generous pinch Cumin
1 Tbsp ground paprika
5 Tbsps vegetable oil
250 grams Egg noodle
½ bunch carrots
½ bunch scallions
2 Tbsps sesame oil
150 grams soybean sprout
salt
peppers

Preparation steps

1.

Soak roll in lukewarm water. Squeeze roll to remove liquid and break into small pieces. In a bowl, mix roll, ground meat, egg and spices. Halve chile, remove seeds and ribs and finely chop. Finely dice mango pulp. Add chile and mango pulp to meat, season with salt and pepper and mix well.

Form mixture into small meatballs. Fry meatballs on all sides in vegetable oil, about 8 minutes. Cook noodles according to package directions. Peel carrots and cut into sticks. Rinse and trim scallions. Slice green portion into rings.

Rinse bean sprouts under hot water and drain well. In a large pan, sauté vegetables in sesame oil, stirring, about 8 minutes. Serve pasta with vegetables and meatballs in bowls.
