Noodles as chips? Yes please! This smart snack variant provides numerous good ingredients through the whole grain pasta. The fiber contained in the pasta stimulates digestion and keeps blood sugar levels low. In addition, the pasta scores with nerve-strengthening B vitamins, blood-forming iron and trumps with many minerals. The icing on the cake is a protein-rich dip with beans and yogurt.

The dip can also be prepared with feta, chopped eggs or tofu. If you want to enjoy the pasta chips vegetarian, you can replace the Parmesan with a hard cheese with microbial rennet.

19 ozs Whole Grain Pasta
salt
2 garlic cloves
3 Tbsps olive oil
1 oz Parmesan
1 tsp Italian herbs (dried)
½ tsp sweet paprika
peppers
1 handful Basil
5 ozs White bean (can; drained weight)
5 ozs Greek yogurt

Preparation steps

1.

Cook pasta according to package directions in plenty of boiling salted water until al dente, drain in a colander.

Finely grate the Parmesan cheese. Peel 1 clove of garlic and cut into slices. Mix pasta with 2 tablespoons olive oil, Parmesan cheese, garlic slices, with half of the Italian herbs and paprika powder and season with salt and bell pepper.

Bake the seasoned pasta for 15-20 minutes at 220 °C / 425 ˚F in an Air Fryer. Alternatively, you can place the pasta on a baking tray and bake it in a preheated oven at 220 °C / 425 °F.

Meanwhile, for the dip, peel remaining clove of garlic. Wash basil and shake dry. Set half aside. Rinse beans and drain.

5.

Finely puree yogurt, garlic, beans, basil, remaining herbs and spices with a hand blender. Garnish dip with remaining basil and serve with the pasta chips.
