- 200 grams Zucchini
- 300 grams Pumpkin (such as butternut)
- 4 Tomatoes
- 350 grams Fusilli
- salt
- 1 onion
- 1 garlic clove
- 2 Tbsps vegetable oil
- 200 milliliters Tomato juice
- 12 Nuremberger grilled sausages
- 100 milliliters Whipped cream
- cayenne pepper
- 2 Tbsps freshly chopped parsley
Preparation steps
Rinse and dry zucchini, trim the ends, halve lengthwise and cut into 1 cm (approximately 1/2 inch) wide pieces. Dice pumpkin pulp. Rinse and halve tomatoes, remove stems and chop coarsely. Cook pasta in plenty of boiling salted water until al dente.
Peel onion and cut into thin rings. Peel garlic and chop finely. Heat 1 tablespoon of oil in a large pan and saute onion and garlic until soft. Add pumpkin and saute briefly, deglaze pan with tomato juice and simmer for about 5 minutes on low heat. Heat remaining oil in another pan and brown sausages on all sides for about 5 minutes.
Add zucchini and tomato to the pan and saute for about 4 minutes. Add cream and season with salt and pepper. Drain pasta and toss with the vegetables. Top with sausages and sprinkle with parsley. Serve.
