- 2 kilograms large, waxy potatoes
- 6 Tbsps white balsamic vinegar
- 100 milliliters olive oil
- 40 milliliters Vegetable broth
- 1 Tbsp Mustard
- 1 tsp sugar
- salt
- freshly ground pepper
- 3 Tbsps chopped parsley
- 5 garlic cloves
- 100 grams Parmesan (whole piece)

Preparation steps

Peel and rinse the potatoes and cut into thin slices. Boil in salted water for 5-6 minutes until al dente. Drain well.

Mix the vinegar with vegetable broth, the olive oil and the mustard and season well with salt, sugar and pepper.
Peel the garlic and cut into thin slices. Stir the parsley and the garlic slices into the marinade.
Place about half of the potato slices in a shallow bowl and drizzle with half the marinade. Plane the Parmesan with a vegetable peeler and shower half of it over the potatoes. Distribute the remaining potatoes on top and drizzle with the remaining marinade. Shower with the remaining Parmesan cheese and serve garnished to taste with parsley leaves.
