Rinse duck breasts and pat dry. Score skin in a diamond pattern. Place, skin side down, in a hot skillet and cook on medium heat for about 8 minutes or until golden brown. Turn over and cook for 5 more minutes. Baste with cooking juices often. Remove from heat, cover with aluminum foil, let rest for 10 minutes.

Uncover and sear, skin side down in hot pan, for about 1 minute. Remove from the pan and season with salt and pepper and serve sliced.
