Preparation steps

Rinse eggplant, cut into ½ cm (approximately 1/5 inch) thick slices. Mix chickpea flour in a bowl with cumin seeds, chili powder, ground coriander, paprika and garam masala. Add 300 ml (approximately 10 ounces) of cold water to the water, mix into a thick batter and season with salt. Place in a deep dish.

Heat oil in a pan, dip eggplant slices in the batter and fry portions in the pan on each side for 4 minutes. Remove from the pan and drain on paper towel. Serve while hot.
