Oyster Tartare with Passion Fruit Sauce and Sole Fillets

- 8 Oyster
- 4 Cherry tomatoes
- ½ tsp finely chopped parsley
- ½ tsp finely chopped Basil
- 1 Tbsp Lime juice

- 1 egg yolk

- 2 Tbsps Passion fruit
- 2 Sole fillet (or another noble fish fillet)
- 1 Tbsp finely chopped, peeled almonds
- 1 Tbsp clarified butter
Preparation steps
For the oyster tartare, rinse tomatoes, remove stem and cut into small cubes. Crack oyster shells, remove flesh and chop coarsely. Mix oysters, tomatoes, parsley and basil, fleur de sel and lime juice, season with pepper and refrigerate. For the passion fruit sauce, in a heatproof bowl or double boiler, mix egg yolk, passion fruit puree and white pepper and season with salt. Set mixture over a hot water bath and beat until thickened and frothy.
For the sole fillets, cut sole fillets in half lengthwise, pat dry and string onto skewers. Press one side of fillets in almonds and sauté in butter until browned and crispy. To serve, divide oyster tartare among four small cocktail glasses. Spoon passion fruit sauce over oyster tartare and hang a sole fillet by the skewer in each glass. Serve immediately.
