- 3 Tbsps olive oil
- 2 Tbsps White vinegar
- peppers
- 2 Chicken thigh (precooked and skinless)
- 8 ozs Cherry tomatoes
- 4 ozs Baby spinach
- freshly grated Parmesan

Cook the pasta in boiling salted water until al dente.

Meanwhile, mix the pesto sauce with the oil and vinegar. Season with salt and pepper.
