- 2 Tbsps Pine nuts
- 1 oz Parmesan
- 7 Tbsps olive oil

- 12 ozs chicken breast fillets
- 1 bay leaf
- 8 ozs Green beans
- 10 ozs orzo
- 24 ozs Whipped cream
- 3 ozs Sour cream
- 3 ozs Chicken broth
Preparation steps
For the pesto, wash basil, shake dry and chop finely. Roast pine nuts in a hot pan without fat for 3 minutes. Grate cheese. Puree basil with pine nuts, cheese, olive oil, salt and pepper not too fine. Pour into a small bowl.
Rinse chicken breast fillet and pat dry. Place in a saucepan with bay leaf, cover with salted water, bring to a boil and simmer, covered, for 9-11 minutes.
Meanwhile, clean and wash beans. Cook Risoni in boiling salted water for about 12 minutes until slightly al dente, adding beans for the last 6-7 minutes.
Drain chicken and pluck into pieces. Place in a large pot with cream, sour cream and broth and heat briefly if necessary, season with salt and pepper.
Drain the pasta and add to the chicken mixture. To serve, pour Risotto into bowls and spread the pesto over the top.
