4 cups water
18 ozs seville Oranges
1 lemon
4 ½ cups granulated sugar (warmed)

Preparation steps

1.
Put the water, oranges and lemon in a liquidiser and blend until finely chopped. Scrape the mixture into a preserving pan.

Bring the mixture to simmering point and simmer for about 2 hours or until the peel is completely soft.

Pour the sugar into the pan and stir over a low heat until the sugar has dissolved. Increase the heat and boil for 15 minutes, then check to see if it has set. Spoon a little onto a frozen saucer. If it wrinkles when you push it with your finger, it’s set. If not, cook for 10 minutes, then repeat the test. Continue until the jam is set.
4.
Allow the marmalade to settle off the heat for 20 minutes before pouring into sterilised jars. Seal immediately with waxed discs and screw on the lids.
