- 11 ozs Almond milk
- 11 ozs Coconut milk
- 1 Organic orange
- 2 Tbsps Birch sugar (or xylitol)
- 6 Tbsps Chia seeds (light and dark)
- 3 ½ ozs Yogurt
- 2 Tbsps Shelled pistachio
Preparation steps
Boil almond drink and coconut milk for 1-2 minutes. Meanwhile, rinse orange, rub dry, and grate peel. Squeeze juice and refrigerate. Stir orange zest, xylitol and 5 tablespoons chia seeds into almond-coconut mix and let cool for 10 minutes. Then mix in yogurt and refrigerate overnight.
The next day, stir in orange juice and pour cream into bowls. Coarsely chop the pistachios and sprinkle the cream with them and the remaining chia seeds.
