12 cups honey
1 tsp Nutritional yeast
¼ cup Lactic acid
1 Tbsp flour
Dried yeast (Port, Malaga or Burgundy)

Preparation steps

1.
Heat the honey in 8 litres of water to approx. 50°C (100°F) until the honey has dissolved. Leave to cool to 25°C (50°F), stir in the remaining ingredients and pour the mixture into a fermentation barrel.
2.
Either before or after fermentation various spices can be added to the mead. Suitable ones include lime flowers, elder flowers, nutmeg, cinnamon, cloves, hops, herbs or ginger.
3.
Fermentation is complete after 2-3 months and the mead should be chilled. It should now by quickly separated from the dead yeast. Store in a cool place.
