- 7 ozs Bulgur
- 1 small Cucumber (chopped)
- 2 flat-leaf parsley (chopped)
- 2 mint (chopped)
- 8 scallions (chopped)
- 2 Tbsps Hemp seeds (optional)
- 4 Tbsps olive oil
- lemon juice (from one lemon)
- sliced Tomatoes (to serve)

Preparation steps
1.
Place the bulgar wheat in a large bowl and cover with boiling water. Leave to soak for 20 minutes, stirring from time to time.
2.
Squeeze out any excess liquid from the bulgar wheat and fluff up the grains with a fork.
3.
Mix in the chopped cucumber, parsley, mint, spring onions and hemp seeds. Mix together the olive oil and lemon juice and stir into the tabouleh.
4.
Season with salt and pepper and serve with tomato slices alongside.
