- 1 cup Quinoa (rinsed in cold water and drained)
- ¼ cup extra virgin olive oil
- 1 lemon (juiced)
- 2 cups canned chickpeas (garbanzos)
- 1 cup cherry Tomatoes (halved)
- 1 small Cucumber (seeded and diced)
- 1 flat-leaf parsley (roughly chopped)
- salt
- freshly ground Black pepper

Preparation steps
1.
Place the quinoa in a large, heavy-based saucepan. Cook gently over a low heat, stirring continuously until the grains separate.
2.
Stir in 550 ml of water and a little salt, and cook until boiling.
3.
Reduce to a simmer and cook for 15 minutes or until the liquid has been absorbed. Transfer to a mixing bowl and leave to cool.
4.
Whisk together the lemon juice and olive oil in a mixing bowl and dress the quinoa with it.
5.
Add the chickpeas, cherry tomatoes, cucumber, and parsley. Fold gently but thoroughly into the quinoa and season to taste.
6.
Spoon into bowls before serving
