- 9 ozs Udon Noodle
- 3 Tbsps vegetable oil
- 2 cups large shrimp (peeled and tail removed)
- 2 Tbsps light soy sauce
- 2 Tbsps sesame oil
- juiced Limes
- ½ tsp sugar
- 2 handfuls Arugula (washed)
- ½ Cucumber (seeds removed and chopped)
- 4 scallions (chopped)
- 4 Tbsps Sesame seeds (lightly toasted)
Preparation steps
1.
Cook the noodles according to the packet instructions, drain well and rinse under cold running water.
2.
Heat the vegetable oil in a wok or skillet and stir fry the shrimp until they are cooked through. Remove from the wok and set aside.
3.
Mix together the soy sauce, sesame oil, lime juice and sugar to make a dressing.
4.
Mix the noodles, shrimp, arugula, cucumber and scallions in a large bowl and stir in the dressing.
5.
Pile the salad onto serving plates and scatter with the sesame seeds.
