- 300 grams button Mushroom
- 1 shallot
- 1 garlic clove
- 6 Sage (coarsely chopped)
- 2 Tbsps vegetable oil
- 2 Tbsps butter
- salt
- freshly ground peppers
- 4 eggs
- 2 slices Ciabatta
Preparation steps
1.
Clean the mushrooms, then coarsely chop.

Peel and finely dice the shallot and garlic.
3.
Heat the oil in a large pan. Add the mushrooms to the pan.

Sear the mushrooms over high heat for one minute, then remove from the heat and set aside.

Add the butter to the pan, then sweat the shallots and garlic until translucent. Mix in the mushrooms, toss to combine, then season to taste with salt and pepper.
6.
Beat the eggs, then add to the pan. Cook until the egg is set, then stir until combined. Add the sage, and season to taste with salt and pepper.
7.
Toast the ciabatta slices, if you'd like.
8.
Top the ciabatta slices with the mushroom mixture. Garnish with fresh sage leaves, and serve.
