- 3 Lettuce
- 1 can pickled Artichoke hearts (about 390 g)
- 150 grams peeled Pine nuts
- 4 Tbsps olive oil
- 2 Tbsps lemon juice
- salt
- freshly ground peppers
- 250 grams Cherry tomatoes
- 200 grams Bocconcini
- 12 slices Serrano ham

Preparation steps

Rinse and dry the lettuce hearts, then tear into bite-sized pieces. Rinse and halve the cherry tomatoes. Drain the artichokes, and cut in half. Toast the pine nuts in a dry pan until golden brown. For the vinaigrette, mix the oil with the lemon juice, then season with salt and pepper.

Mix the lettuce with the tomatoes, pine nuts, artichokes, and the well drained mozzarella balls. Transfer into salad bowls, drizzle with the vinaigrette, and garnish with 3 slices of the ham. Serve with a fresh baguette, if you'd like.
