Mixed Salad with Tomato and Mozzarella
Rinse and trim the arugula, parsley and cilantro. Pluck the small leaves of cilantro and parsley. Cut the artichokes into quarters. Rinse and halve the tomatoes.
Cut the ham into small cubes. Cut the mozzarella into slices. Rinse, trim and cut the scallions into thin rings.
Add all the prepared salad ingredients into a bowl and mix gently.
For the dressing, mix the olive oil with balsamic vinegar, lemon juice, 2-3 tablespoons of water and sugar. Season with salt and pepper. Drizzle the dressing over salad and serve.
