4 Salmon (each about 125 grams)
salt
freshly ground peppers
5 Tbsps vegetable oil (such as canola or sunflower)
½ tsp Cumin
1 Tbsp light Sesame seeds
350 grams mixed Lettuce (such as lamb lettuce, radicchio, frisee lettuce)
250 grams Cucumber
1 small Salad onion
½ handful Coriander
2 Tbsps Orange juice
1 tsp Sweet chili sauce
2 Tbsps Vinegar

Preparation steps

Rinse and pat dry salmon, season with salt and pepper. Heat 2 tablespoons of oil in a pan and cook salmon for about 5 minutes per side. Sprinkle spices on a plate and mix well, coat salmon with the mixture. Rinse and spin dry lettuce, tear into smaller pieces. Rinse and dry cucumber, cut lengthwise into strips and dice. Peel and halve onion, cut into thin strips. Arrange lettuce, cucumber and onion in four lunchboxes. Separate salmon coarsely and top salad with salmon pieces. Garnish with cilantro leaves.

Prepare dressing in a sealable jar. Shake together orange juice, sweet chili sauce, remaining oil and vinegar. Season with salt and pepper. Serve salad drizzled with the dressing as needed.
