Preparation steps

Squeeze the lemon and season the juice with salt and pepper. Whisk in 3 tablespoons olive oil. Cut half of the basil into thin strips and stir into the marinade. Stir the rinse and drained shrimp into the marinade and let stand briefly. Rinse radicchio, arugula and mache lettuce, trim and shake dry. Tear into small pieces.

Blanch tomatoes in boiling water, rinse in cold water and remove the skins. Halve, remove seeds and dice the flesh. Arrange the salad greens on 2 plates. Season the vinegar with salt and pepper and whisk in remaining oil. Drizzle over the salad. Before serving, arrange shrimp and tomato pieces on the salad and garnish with remaining basil.
