200 grams mixed Lettuce (such as Frisée, red chard, arugula, spinach, corn salad)
125 grams Cherry tomatoes
12 shrimp
2 Tbsps butter
1 garlic clove
For the dressing
1 shallot
4 Tbsps sunflower oil
3 Tbsps white balsamic vinegar
2 sprigs Dill
salt

Preparation steps

Rinse and dry the lettuce, then remove the hard stems. Rinse and halve the cherry tomatoes. Peel and devein the shrimp. Rinse the shrimp and pat dry. Peel and finely chop the shallot. Heat the butter in a pan. Crush the garlic, and add to the pan. Add the shrimp, and sauté until cooked through. Remove the shrimp from the pan, then add the shallot and sauté until soft. Deglaze with the balsamic vinegar, and transfer to a bowl. Rinse and dry the dill, then finely chop. Add the dill and the remaining ingredients to the bowl, and whisk until combined.

Place the lettuce on plates, top with the tomatoes, and drizzle with the dressing. Top each salad with 3 shrimp, and serve.
