For the ice cream
2 Vanilla bean
2 cups double cream
0.333 cup sugar
3 egg yolks
For the fruit salad
2 pink Grapefruit
1 Cantaloupe (peeled, seeds removed and chopped)
1.333 cups Grape
1.333 cups Blueberries
Lime zest
Lime juice

Preparation steps

For the ice cream:

Split open the vanilla pods, scrape out the seeds and put the seeds and pods into a saucepan with the cream.

Bring to a boil, add the sugar and simmer over a low heat for 5 minutes, stirring to dissolve the sugar. Remove from the heat.

Whisk the egg yolks in a bowl until light and creamy.

Remove the vanilla pods and pour the cream into the eggs. Stir well and pour into a shallow container.

Let cool then freeze for at least 3 hours, stirring with a fork a few times during freezing.

For the fruit salad:

Peel the grapefruit with a sharp knife, removing all the pith. Cut the segments away from the membranes, reserving any juice.

Mix the grapefruit segments, melon, grapes and blueberries and stir in the reserved grapefruit juice and lime juice.
10.
Serve the fruit salad with the lime zest sprinkled over and the ice cream alongside.
