- ⅔ cup cream (38% fat)
- ⅓ cup milk
- 3 eggs
- ⅓ cup all-purpose flour
- ¼ cup coconut sugar
- 2 Tbsps melted butter
- 1 tsp vanilla extract
- 1 pinch salt
- 11 ozs mixed Berry (raspberries, blueberries, redcurrants)
- 1 Tbsp Fructose

Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Butter a 23cm|9" pie dish.
2.
Whisk together the cream, milk, eggs, flour, sugar, melted butter, vanilla and salt until smooth.
3.
Arrange the berries in the dish, then pour the mixture over the berries.
4.
Bake for about 50 minutes until puffed and light brown. Cool in the dish for 15-20 minutes on a wire rack.
5.
Sprinkle fructose over the top. Serve warm.
