4 ripe Tomatoes (rinsed; seeded and finely chopped)
2 scallions (rinsed and finely chopped)
1 clove garlic cloves (peeled and finely chopped)
3 Tbsps olive oil
2 Tbsps Lime juice

freshly ground Black pepper (to taste)
For Quesadillas
1 red chili pepper (rinsed; seeded and finely chopped)
2 ripe Avocados (peeled; pitted and chopped)
½ Red onion (finely chopped)
2 Tbsps fresh cilantro (finely chopped)
1 Tbsp lemon juice (or lime juice)
2 Tbsps olive oil (divided)
salt (to taste)
freshly ground Black pepper (to taste)
8 Tortillas (8-inch)
1 ¾ cups mixed, shredded Cheese (such as Manchego, Pepper Jack, Monterey Jack)
1 fresh Lime (quartered; for garnish)

Preparation steps

For Tomato Salsa:

Combine chopped tomatoes, onions, and garlic in a small bowl. Add olive oil, lime juice and season with salt and pepper. Toss to incorporate. Set aside.

For Quesadillas:

Preheat oven broiler.

In a mixing bowl, combine chopped chili peppers, avocados, red onion, cilantro, lemon or lime juice, and 1 tablespoon olive oil. Season with salt and pepper, stirring to combine.

Place tortillas on a baking sheet and brush tops with remaining olive oil. Broil tortillas until golden, about 2 to 3 minutes. Sprinkle tortillas evenly with cheese and broil until cheese is melted, about 1 minute.

Spread avocado mixture evenly over 4 tortillas and top each tortilla with remaining tortillas, cheese side down.

Cut quesadillas into wedges. Garnish with a lime wedge and serve with tomato salsa.
