Preparation steps

Grate Gouda cheese. Rinse cilantro, shake dry and chop leaves. Rinse scallions, clean and cut into thin rings. Reserve 2 to 3 tablespoons of scallions for garnish. Rinse Hungarian wax peppers, clean and cut into thin strips. Rinse chile pepper, clean, remove seeds and chop finely. Place four tortillas on work surface and sprinkle with half of the cheese. Divide cilantro, scallions, Hungarian wax pepper and chile pepper between tortillas. Season with salt and pepper and cumin. Sprinkle remaining cheese on top and cover with remaining tortillas. Press together. Microwave quesadillas one at a time. Place each quesadilla on a plate and cook for about 2 minutes on high in an 800-watt microwave until cheese is melted. Remove and cut into pieces. Garnish with reserved scallions and serve immediately.
