1 onion
1 Tbsp olive oil
1 l Chicken broth
1 bay leaf
400 grams white Beans (canned)
1 handful Basil
350 grams smoked turkey breasts
salt
freshly ground peppers
1 pinch ground Caraway
freshly grated Nutmeg
4 Tbsps scallions

Preparation steps

Rinse, trim and cut the green beans into small pieces. Rinse, trim and cut the leeks into rings. Rinse the bell pepper, remove the seeds and cut into strips. Peel the onion and chop finely. Fry the onions in hot oil in a large pot. Add the broth, green beans, leek and bell pepper. Simmer for about 10 minutes over low heat.

Rinse the kidney beans in a colander and add to the stew. Rinse the basil, pluck the leaves from the stem and stir into the stew. Cut the smoked turkey breast into bite-size cubes and heat in the stew for about 5 minutes. Season with salt, pepper, ground caraway and nutmeg. Serve in bowls sprinkled with chives.
