- 4 cups Vegetable broth
- ½ cup Red lentils
- 2 medium carrots (diced)
- 4 cloves garlic cloves (crushed)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 1 ½ cups diced Tomatoes
- 1 cup Edamame (shelled)
- 2 cups canned cannellini beans (rinsed and drained)
- 2 cups canned, dark red Kidney beans (rinsed and drained,)
- 2 cups canned Black eyed pea (rinsed and drained)
- 3 Tbsps fresh lemon juice
- fresh Basil (for garnish)

Preparation steps
1.
In a large pot, combine broth, lentils, carrots, garlic, and salt and pepper; bring to a boil. Reduce heat to simmer and let cook until lentils are soft, about 1 hour, stirring occasionally.

Add tomatoes, edamame, three cans of beans and lemon juice. Stir to combine. Raise heat to medium-high and cook about 10 minutes longer, or until heated through and flavors are well blended.
3.
Adjust seasoning and garnish with fresh basil to serve.
