Minute Steak with Pepper Salsa
Rinse pork cutlets and pat dry.
Peel shallots and garlic and chop finely.
Rinse bell peppers, cut in half, remove seeds and ribs and finely dice.
Heat oil in a frying pan and fry pork cutlets for 1 minute on both sides. Remove pork from the pan, sauté shallots, garlic and bell peppers in remaining oil in the pan. Add broth, 1 tablespoon cold water and starch. Let sauce simmer until slightly thickened. Add pork back into the pan and cook for about 1-2 minutes over a low heat. Turn pork over once. Season sauce with honey, lemon juice, salt and cayenne pepper to taste. To serve, arrange pork and sauce on plates.
If desired serve with potato pancakes.
