1 ⅔ cups all-purpose flour
½ cup butter

2 ¼ cups fresh, young Spinach (chopped)
2 Bell pepper (red and yellow; diced)
1 Zucchini (roughly grated)
5 eggs
1 ½ cups milk
1 ½ cups Cheddar cheese (grated)

Preparation steps

1.
Pile the flour on the work surface and stir in a pinch of salt. Create a well in the middle and place the butter around the well. Pour 60 ml water into the well and quickly knead into a ball. Wrap in cling film and chill for 30 minutes.

Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and grease a muffin tin.

Roll out the pastry on a floured work surface and cut out circles approx. 10 cm in diameter. Place the circles in the prepared muffin tin.

To make the filling, mix together the spinach, pepper, courgette, eggs, milk and cheese and season with salt, ground black pepper and nutmeg.
5.
Transfer the mixture to the pastry cases and bake for 20-25 min. Remove from the oven, leave to coll slightly then remove from the tin and serve.
