- For the scones
- 1 ⅔ cups flour
- 3 tsps Baking powder
- freshly ground White pepper
- ½ tsp salt
- ¼ cup soft butter
- milk
- 1 egg yolk
- To serve
- 7 ozs smoked Salmon (in slices)
- ⅞ cup Clotted cream (creme fraiche or cream cheese)
- 16 rosemary

Cannot be frozen. You can also use small bread rolls instead of scones.
Preparation steps
1.
Mix the dry ingredients for the scones. Rub in the butter, then quickly mix with enough milk to make a soft dough. Knead lightly.

Roll out on a floured work to a thickness of approximately 1" and cut out 8 squares approximately 2" in size. Place on a baking tray lined with baking parchment, brush with beaten egg yolk and bake in a hot oven (400°F) for 12-14 minutes until lightly browned.
3.
To serve, split the scones and spread with a little clotted cream, creme fraiche or cream cheese. Top each with a slice of salmon and garnish with a small sprig of rosemary.
