6 potatoes (cooked the previous day)
200 grams Sour cream
100 grams Whipped cream
1 tsp cornstarch
4 eggs
salt

Nutmeg
3 Tbsps Parmesan (grated)
1 Tbsp scallions
For the herb quark
250 grams Quark
100 grams Sour cream
1 garlic clove
2 Tbsps Fresh herbs
1 generous pinch grained Broth
salt

Preparation steps

For the casserole: Peel and dice potatoes. Separate eggs, beat egg whites to a stiff snow. Mix yolks with cornstarch, sour cream and cream until smooth. Mix in chives, parmesan and potatoes. Fold in egg whites. Pour mixture into 6 large ramekins and bake in an oven preheated to 200°C (400°F) for about 20-30 minutes. Cover with foil to prevent too much browning.

For the herb quark: Meanwhile, combine quark and sour cream. Peel and mince garlic, stir into quark mixture, add herbs and spices and season with salt and pepper.

Remove casseroles from oven and garnish with cheese. Serve with herb quark.
