This low-carb dish is a perfect starter for a barbecue or summertime picnic.

Since balsamic vinegar plays such an important role in the flavor of this dish, make sure to use the best quality vinegar you can find. High-quality balsamic vinegar has a much richer variety than lower-quality varieties.

7 ozs honeydew melon
8 ozs Cantaloupe
3 sprigs mint
4 Tbsps dark balsamic vinegar
2 Tbsps powdered sugar

Preparation steps

1.

Core the melons and scoop small melon balls from the pulp. Rinse the mint, dry, pluck off the leaves and chop coarsely.

2.

Mix the herbs with the vinegar, melon balls and the sugar and leave to marinate for 30 minutes. Serve with the marinade filled in champagne glasses.

Hi, yes if you like a lighter taste you can use any type of flavored vinegar, or a Champagne vinegar would be nice too.
 
This looks sooo good for the spring time! Could I use another kind of vinegar?
