Melons and Strawberry Salad with Balsamic Dressing
- 75 grams brown sugar
- 5 Tbsps balsamic vinegar
- 5 Tbsps Orange juice
- 250 grams Strawberries
- ½ Charentais melon
- ½ honeydew melon
- For the decoration
- Lemon balm

Melt brown sugar in a pan on medium heat until caramelized. Add balsamic vinegar and orange juice. Simmer vinegar-caramel sauce on low heat until sugar has dissolved completely.
Rinse and clean strawberries, halve or leave whole depending on size.
Halve melon and core. Make melon balls with a melon baller and place into dessert bowls. Add strawberries.
Drizzle with cooled balsamic caramel sauce.
Garnish with lemon balm leaves and serve.
