1 large Cantaloupe (such as Galia or honeydew melon)
½ organic lemon
½ organic Orange
4 Tbsps olive oil
coarse salt
freshly ground peppers
sugar
1 handful fresh Fresh herbs (such as mint, parsley, chervil)
300 grams Prosciutto (in wafer-thin slices, such as San Daniele)

Preparation steps

1.

Cut the melon in half, scrape out the seeds, cut into wedges and cut the flesh from the shell.  Halve the columns and arrange the melon pieces on four plates.

2.

Rinse the lemon and orange in hot water and zest. Squeeze out the juices and whisk together with the zest, oil and season with salt, pepper and a pinch of sugar. Rinse the herbs, shake dry and pluck off the leaves.

3.

Arrange the prosciutto on the melons and drizzle with the dressing. Before serving sprinkle with herbs.
