- 4 cups Prawn (peeled, entrails removed)
- 2 Tbsps vegetable oil
- 2 Tbsps lemon juice
- 4 Tbsps olive oil
- honey (to taste)
- 4 cups Watermelon (peeled, pitted and diced)
- 1 cup Mozzarella
- ½ cup Basil (chopped)
Preparation steps
1.
Season the prawns with salt and ground black pepper and fry in hot vegetable oil until golden brown.
2.
Mix together the lemon juice and olive oil and season with salt, ground black pepper and honey.
3.
Arrange the melon, mozzarella, basil and prawns in a bowl and drizzle with the vinaigrette.
