- ½ honeydew melon
- 8 sprigs Chives
- 8 slices Bresaola (thinly sliced)
- 1 Tbsp lemon juice
- 2 Tbsps olive oil
- salt
- freshly ground peppers
- liquid honey (if desired)

Preparation steps
1.
Peel melon and core. With a mandoline, cut 8 thin, uniform slices.
2.
Blanch chives briefly in boiling water. Rinse with cold water and drain well.
3.
Lay melon slices on a work surface, top with meat slices and roll loosely. Tie each roll with a chive and transfer to a serving plate. Make a vinaigrette: Whisk together lemon juice and oil and season with salt, pepper and a little honey if desired. Serve melon rolls drizzled with vinaigrette.
