- 300 grams Cherry tomatoes
- 1 scoop Mozzarella (about 125-150 grams)
- ½ bunch Basil
- 1 shallot
- 3 Tbsps Red wine vinegar
- salt
- freshly ground peppers
- 1 pinch sugar
- 1 garlic clove
- 5 Tbsps olive oil
- 300 grams Penne

Preparation steps
1.
Rinse and quarter the tomatoes. Cube the mozzarella. Pluck the basil leaves from the stems. Peel and finely chop the shallot.
2.
Mix the vinegar, salt, pepper and sugar. Peel and squeeze the garlic through a press. Whisk with the olive oil. Mix all of the prepared ingredients together and allow to marinade for about 30 minutes.
3.
Cook the pasta in boiling salt water until al dente. Drain the pasta and rinse in cold water. Stir in the tomato mixture and serve.
