250 grams green Beans (frozen)
12 Cherry tomatoes
2 hard-boiled eggs
200 grams Penne

Preparation steps

Rinse arugula and spin dry. Boil green beans in salted water for 5 minutes to blanch and drain. Rinse scallions and cut into rings. Peel eggs and cut into wedges. Rinse cherry tomatoes and cut in half. Cook penne in the boiling salted water until al dente. Drain and mix with the olive paste.

For the vinaigrette, mix 4 tablespoons olive oil, 2 tablespoons balsamic vinegar, salt and pepper. Toss arugula, beans, tomatoes and scallions together. Drizzle with vinaigrette. Serve salad with penne pasta and hard-boiled eggs on plates. Season to taste with salt and pepper.
