Preparation steps

1.
Cook the potatoes whole in boiling water with a little salt until tender to the point of a knife. Drain, reserving a mugful of the cooking water.
2.
Return the potatoes to the pan and steam them dry over a low heat so all the water evaporates.
3.
Leave to cool until you can handle them, then slip the skins off. Put the flesh back in the pan with a little of the cooking water to moisten and half the oil. Mash until completely smooth, adding more water if necessary.
4.
Stir in the parsley and season, then drizzle over the remaining oil to serve.
