- 2 Red onions (cut into wedges)
- 1 large, red Bell pepper (seeds removed and sliced)
- 1 large, yellow pepper (seeds removed and sliced)
- 2 cloves garlic cloves (sliced)
- 3 Tbsps olive oil
- 2 Tbsps balsamic vinegar
- 1 tsp sugar
- salt
- freshly ground Black pepper

Preparation steps
1.
Heat the grill.

Place the vegetables and garlic in a large shallow bowl and add 2 tablespoons oil. Toss well until the vegetables are coated with oil.
3.
Grill the vegetables, in batches, for 5-6 minutes, turning frequently, until charred and just tender.
4.
Put the vegetables into a bowl.
5.
Whisk together the remaining oil with the vinegar and sugar. Season to taste with salt and black pepper and pour over the hot vegetables.
