- 4 large, baking potatoes
- 1 Tbsp Oil
- Sea salt
- 2 Tbsps butter
- 1 small onion (chopped)
- 1 stick Celery (finely chopped)
- ⅔ cup Feta (crumbled)
- ⅔ cup sun-dried tomatoes (in oil)
- 12 Olives (pitted and sliced)

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6.

Prick the potatoes several times with a fork. Rub the oil over the potatoes, then scatter over the sea salt. Place directly on the shelf in the oven and bake for 1 1/4-1 1/2 hours, (depending on the size of the potato) until golden-brown and crisp on the outside and soft on the inside. Split each baked potato in half.
3.
Heat the butter in a frying pan and cook the onion and celery for about 5 minutes, until softened. Allow to cool slightly.
4.
Mix with the cheese, tomatoes and olives and spoon onto the potato halves.
