1 kaiser roll (day-old)
1 egg
1 onion
80 grams Sunflower seed
4 carrots
½ tsp lemon juice
2 Tbsps butter
2 Tbsps vegetable oil

For the salad
100 grams Watercress
50 grams Alfalfa sprouts
1 sm can Corn
2 Tbsps Fruit Vinegar
6 vegetable oil
salt
peppers

Preparation steps

Soak roll in lukewarm water. Squeeze roll to remove excess liquid and mix with ground meat. Season with salt and pepper. Peel and finely chop onion. Rinse carrots, trim off ends and grate coarsely. Sprinkle carrots with lemon juice. Add onion, carrots, eggs and sunflower seeds to meat. Mix well. Form mixture into meatballs. In a pan, heat butter and oil. Fry meatballs on all sides, about 10 minutes.

For the salad: Rinse and trim watercress. Drain corn. In a bowl, combine watercress, corn and alfalfa sprouts. To make dressing: Whisk together vinegar and oil. Season with salt and pepper. Toss salad with dressing and serve with meatballs.
