Ingredients

For each

1stale White roll
600 gramsGround meat (beef or pork)
1Egg
1 tablespoonfinely chopped Parsley
1 tablespoonfinely chopped Mint
Salt
freshly ground Pepper
Breadcrumbs as needed
3 tablespoonsVegetable oil
1whole Lemons zested and juiced
1Onion
2 tablespoonsButter
500 gramsPeas
150 millilitersVegetable broth

Directions

1 Soak the stale bread in a bit of lukewarm water. Mix in the ground meat, egg and fresh herbs in a bowl. Squeeze the water from the soaked bread and add to the meat. Season with salt and pepper and mix well with hands, adding a bit of bread crumbs if the mixture seems too soft. Shape into small balls and sauté in hot oil until golden brown on all sides. 
2 Peel and dice the onion. Sauté the onion in butter until translucent. Stir in the lemon zest, lemon juice, peas and vegetable broth. Season with salt and pepper and simmer for 5 minutes.  
3 Serve the peas alongside the meatballs.
