- 4 cups Lamb fillet (or leg steak, cut into 2cm cubes)
- 2 garlic cloves (crushed)
- 2 Tbsps balsamic vinegar
- 1 Tbsp rosemary (chopped)
- olive oil
- salt
- peppers
- In addition
- 8 red chili peppers
- 1 large onion (cut into chunks)
Preparation steps
1.
Toss the cubed lamb with the garlic, balsamic, rosemary, a little oil and salt and pepper and leave to marinate for up to 30 minutes.
2.
Thread the lamb onto skewers, alternating with the chillies and onion. Sprinkle a little seasoning over.
3.
Cook over hot embers for 8-10 minutes until the lamb is rose pink inside and charred outside
