- 18 ozs red chili peppers
- 3 cups water
- 2 ½ ozs Sea salt (for soaking)
- 15 black peppercorns
- 5 bay leaves
- 2 Tbsps Coriander
- 1 Tbsp salt
- 6 Tbsps sugar
- 4 cups white wine vinegar

Preparation steps
1.
Slit open the chillies on one side only and remove the seeds. Place the chillies, sea salt and water in a bowl, stirring until the salt has dissolved. Cover and leave to stand for 24 hours. Drain, rinse and dry the chillies.

Put the remaining ingredients into a pan and heat gently, stirring, until the sugar has dissolved. Bring to a boil, then reduce the heat and simmer for 5 minutes. Remove from the heat.
3.
Pack the chillies into hot sterilised jars and pour in the hot vinegar mixture, to cover the chillies. Cover and seal tightly. Store in a cool, dark place for 2 weeks before using
