600 grams Cucumber
3 scallions
4 Tbsps Fruit Vinegar
4 Tbsps sunflower oil
freshly ground peppers
1 pinch sugar
250 grams Quark
100 milliliters Whipped cream
500 smoked Mackerel

Preparation steps

1.

Peel the potatoes, cut into quarters and cook for 10-15 minutes in salted water until tender.

2.

Rinse the cucumber and cut into thin slices. Rinse and trim the scallions and cut into thin rings. Combine both with the vinegar and oil and season with salt, pepper and sugar.

3.

Drain the potatoes and mash while still hot. Stir in the quark and the cream. Season with salt.

4.

Cut the mackerel fillets into pieces.

Arrange the mashed potatoes on plates along with the cucumber salad and fish pieces and serve seasoned with pepper.
