750 grams potatoes (waxy)
salt
200 milliliters Vegetable broth (Instant powdered)
1 Red Bell pepper
1 Endive
1 bunch Watercress
3 Tbsps White vinegar
white freshly ground pepper
1 onion
1 sm package Fresh herbs (frozen)
4 Tbsps vegetable oil
1 smoked Mackerel

Preparation steps

1.

Scrub potatoes and cook in boiling salted water, 20-25 minutes. Drain, peel and cut potatoes into wedges. Combine potatoes with 6 tablespoons broth and let stand about 30 minutes.

Rinse, quarter and remove seeds and ribs from bell pepper. Cut into pieces. Remove outer leaves of endive. Remove core and cut endive into finger-width strips. Rinse watercress, shake dry and strip leaves from stems.

Whisk vinegar and remaining broth and season with salt and pepper. Peel and dice onion.

4.

Mix onion and frozen herbs with vinegar and broth. Whisk in oil. Mix pepper, endive and watercress with potatoes. Pour dressing over vegetables and mix to combine. Separate smoked mackerel into bite-sized pieces and fold into the salad.
