Preparation steps

Peel the potatoes and cook in boiling salted water for 30 minutes.

Heat the milk with the cream, then transfer to a bowl. Add the butter to the bowl. Drain the potatoes thoroughly, and pass through a food mill into the bowl. Mix together until a creamy puree has formed. Season to taste with salt and nutmeg, and serve.
