Preparation steps

1.

Peel the potatoes and cut into halves or quarters. You want them to all be similar in size. Cook in boiling salted water for 25 minutes, until tender. Drain the potatoes and dry slightly. Pass the potatoes through a ricer.

Bring the milk to a boil, remove from the heat, then mix into the potatoes. The amount of milk may vary based on the desired consistency. Season to taste with salt and nutmeg. Mix in the butter, stir until combined, and serve.
